Winemaking Information
The grapes are pressed immediately after arrival. Only the free run juice is transferred to tank for a slow, ~20-day fermentation. The wine spends a year on its fine lees in tank with regular batonnage before aging in old French barriques for ~9 years.
Vineyard Information
Made from a friend’s 0.8ha parcel of Timorasso planted in the 1950s in Casasco, near Alessandria. The vineyard is at 480m elevation on lime-rich clay. Grapes are cooled to just over freezing for 5 days before transport to the winery.
