In Burgundy, there are those producers whose village-level bottlings eclipse their neighbor’s Premier Cru. Same here. Our Provocateur Pinot lives up to its namesake, challenging folks to re-think what a value bottling can be. Small-lot wild yeast fermentations in open-top wood and stainless steel tanks. Limited pre-ferment maceration, followed by minimal, but targeted temperature and punch-down intervention. 100% barrel aged for at least a year in primarily older French oak. Racked and bottled unfined and unfiltered. The wine generally shows deep ruby red in glass and with an effusive nose of broad cherry and sweet spice. The attack is substantial and saline, revealing candied cherry, smoke, jerky and slight anise on a fine, linear structure.
